Chuños, are freeze dried potatoes prepared by Quechua and Aymara communities in South America, by leaving potatoes out overnight high up in the Andes . Not only can the finished product be stored for many years, they also provide a way of utilising frost resistant but toxic varieties, as the toxins leech out of the potatoes during the freezing process. These are a selection of publicity and personal stills taken on the shoot.
