“La Matanza”

Secrets of the food you eat (BBC2)

La Matanza, meaning “the sacrifice” is an annual celebration during which a family pig is slaughtered, that takes place every winter in Extramadura, Spain. Fed exclusively on acorns, these are pata negra “black footed” pigs whose hams are used to prepare the famous Jamón Iberico. For families, the whole pig is precious, nothing is wasted. These are a selection of publicity and personal stills taken on the shoot.
